Welcome to Steemit Challenge Season 32 week#6 of The Kitchen Diaries!. First of all I would like to thank @steemitblog for giving me this opportunity.

Introduction

I’m honestly so excited to start this 6-week journey with all of you in The Kitchen Diaries. For me, cooking has never just been about following a recipe or mixing ingredients in a pot. It’s about the smell that reminds you of your childhood home, the small creative choices you make when you’re short on time, and the stories that quietly live in every kitchen table and family meal.

This season, each week will bring a new theme for you to explore and make your own. Some will push you to be resourceful, others will pull at your memories, and a few will just be about having fun with food again. I can’t wait to read your stories, see your photos, and discover the unique ways you turn simple ingredients into something meaningful.

Let’s be honest, not every day in the kitchen is a win 😅 I’ve had my share of “oops” moments too. I remember the first time I tried making custard, it turned into a lumpy mess and my kids just laughed and said “Mama, is this soup?” That day felt like a failure, but I didn’t give up.

This week is all about those kitchen mistakes that later became our best recipes. I’ll share one dish I totally ruined at first, but now my family asks for it every week. Because cooking is just like life, we learn, we laugh, and we make it yummy in the end

My Recipe

Qeema bhary naan (Mince stuffed bread)

For today's contest theme I want to share a delicious recipe when I tried first time totally wasted that is "Qeema bhary naan". When I tried it first time filling was excellent I was quite happy and dough was looking perfect too but when I tried to make naan it became very difficult to handle and when i baked first the dough was uncooked and on more heating it became very hard can't be chewed. I really felt bad and my whole day efforts wasted. But I never give up and tried to make it again after few days very carefully and I got best results. Now I'm making this dough often on my family's demand and the result turned out excellent.

Let's start today's recipe;

Let's move towards the recipe;

Ingredients:

For Dough:

Flour 500g
Salt 1tbsp
Sugar1/2tsp
Yeast 1/2tsp
Baking soda 1/2tsp
Ghee1_1/2tbsp
Yougart 1/4cup
Milk as needed

For Stuffing:

Mince (chicken/beef/mutton) 500g
Ginger garlic paste 1tbsp
Chilli powder 1.5 tsp
Turmeric powder 1/2tsp
Corridor powder 1.5 tsp
Salt as per taste
Black pepper 1/2tsp
Onion chopped (3 medium size)
Corridor leaves 1tbsp (chopped)
Green Chilli 3_4

Making:

For Dough:

  • Take flour in a bowl, add 1/2tsp Yeast, 1tbsp salt, 1/2tbsp sugar, 1/2tsp baking soda, 1 ,1/2tbsp of ghee and 1/4cup of Yougart. Mix well all ingredients nicely and slowly add warm milk to make it smooth dough. Approximately around 1/2cup of milk is needed to make dough. Rest the dough for 2-3hours.

For Stuffing:

  • Wash Mince properly and remove its excess water from strainer. Chopped onions finely and keep it side. Add minced in a pan, add less oil in it and sauté until its colour changes, add ginger garlic paste in it and fry it for 1-2 minutes then add all dried spices and cook it for few minutes. Then add chopped onions and cook it for few minutes. Now Stuffing is ready.

Bread Making:

  • Dust flour on counter, make balls of bread and roll it with rolling pin. Fill mince filling at the center of rolled dough and closed it again to make it ball.

  • Now roll it with soft hands ,press from middle to edges to roll it . This rolled bread is not thin , thickness should be near to 1/2 inch. Then make cuts with knives at its edges and make with your fingers at the center. Rest it for 5 minutes by covering cloth then bursh beaten egg or milk at the surface of dough. Sprinkle black seed and sesame seeds if you like.

  • Bake it in preheated oven at 180°C for 15-18 minutes. When the surface turns golden its done.

  • Chopped coriander leaves and add ghee/butter and make its mixture. Now brush this mixture on stuff bread. It gives shine to it and it's taste enhanced too.

  • Now delicious qeema bhary naan is ready to serve. Served them hot with yougart sauce.
